easy backpacker recipes - beans 'n bread recipeCanned beans are cheap and healthy, which makes them very convenient for a backpackers meal. For this recipe we used Limabeans. They contain a lot of minerals, iron and vitamines and you can find them in every supermarket or Turkish market.

INGREDIENTS (serves 2)
350 Gr tomatoes, diced (you can also use canned tomatoes, but we prefer fresh ones)
400 Gr canned Limabeans
100 Gr Feta
1 Lemon
1 Onion, chopped
1 Garlic clove, chopped
1 Cinnamon stick
Handful parsley, chopped
Toasted bread
Olive oil
Pepper and salt to season

HOW TO?

  1. Heat the oil in a large pot and fry the chopped onions and garlic until golden brown.
  2. Now add the tomatoes and the cinnamon stick (and some red wine, if you like). Let this simmer for about 20 minutes and add the beans. Let simmer for another 30 minutes and season with pepper and salt.
  3. Garnish your stew with the chopped parsley, feta, some lemon juice and a drizzle of olive oil.
