easy backpacker recipe – ceviche

backpackers recipeCeviche is a traditional Peruvian dish consisting of fresh fish cooked raw in lemon juice and served with sweet potato and corn. We created a million different variations, always based on local or seasonal ingredients. Here’s one of the easiest, hostel proof ceviche recipes. We used rosemary, but you can add any herbs you desire. Coriander and basil go well together as well.

Ingredients (serves 2)
200 gr. White fish filet (dorade, cod, seabrass, …), raw shrimps or a mix, in chunks
1 Zucchini, cut into 1/2 inch rounds
1 Onion, chopped in rings
20 gr. Cilantro/parsley/basil, chopped
2 tsp Olive oil (extra vergin)

Marinade
Juice of 2 limes/lemons
Handfull of sweet, little tomatoes
2 Twigs of rosemary
Pepper and salt to season

How to…
1.Squeeze the tomatoes in a bowl and mix (flesh and juice) together with the other ingredients for the marinade.
2. Add the fish, zucchini and onion to the marinade. Mix the juices well into the fish and let it rest for approximately 15 minutes. The sour of the lemon juice will garen the fish.
3. Season your ceviche with the fresh herbs, and drizzle with olive oil. ENJOY!
