Ingredients (Serves 2)
Olive oil
Can of sardines (we used one in tomato juice)
1 lemon
Parsley
1 can of white beans
3 tomatoes
1 clove garlic, finely chopped
½ onion, finely chopped
ts Chili powder or ½ a chilli (chopped as small as possible)
100 gr roasted almonds (optional)

How to?
For the bean puree
Rinse and drain the beans and mash with a fork until creamy but chunky mixture, together with a handful of parsley leaves, juice of 1 lemon, pepper and salt.

For the tomato salsa
Cut tomatoes in half and remove the seeds. Chop into small pieces and add olive oil, garlic, onion, chilli, pepper and salt.

Cut the bread in long slices and preferably roast it in the oven or a pan.

Serve the bean mash, the tomatoes and a can of sardines together with the roasted bread and almonds (optional) and decorate your own toast. Combine with a simple (rocket) salad for a complete dinner.
