Huevos Rancheros Huevos Rancheros is a traditional Mexican breakfast, but we rather eat it for dinner. It’s cheap, super simple, fast and…Healthy! Black beans are good for your heart and cholesterol, full of fosfor (strong bones and teeth) and they contain a lot of iron. This makes beans a perfect, budget wise substitution for meat. We love our huevos rancheros with the smooth texture of pebre, a South American condiment that we learned to prepare in Chile. If you like it more spicy, you can season the pebre with some chopped chilli and garlic. Serves 2

Ingredients

Huevos RancherosBeans
1 Can of black beans, drained
1 Tsp of cayenne
1 Tbsp olive oil
Salt & pepper

Pebre
1 Avocado, chopped
3 Tomatoes, chopped
1 Red onion, chopped
1 Tbsp olive oil
20 gr Coriander, chopped
Salt & pepper

2 Eggs
1/2 Tbsp of oil
2 Tortillas/tacos (round ones)
2 Tsp crème fraiche
Extra coriander to garnish

How to?
1. When using tortillas, preheat the oven to 180 and roast the tortillas until crunchy
2. Mix the beans, cayenne and olive oil and season with salt and pepper.
3. Mix all the ingredients for the pebre in a separate bowl and season with pepper and salt.
4. Bake your egg. In the meanwhile you can start decorating your tortillas our tacos. Cover
them with the beans, followed by the pebre and top with your baked egg. Some pepper
and coriander to garnish and a dot of crème fraiche on the side….Enjoy!
