Any country not too far from the sea has a great fish market. You can’t sleep in because these markets normally start very early and will be gone around noon. But we assure you an unforgettable ‘local’ experience! So get up early, go to the market and ask for a local, white fish. Good fish doesn’t need much condiments to taste great: a bit of pepper, salt, juice of one lemon and a bit of olive oil can be enough. In this dish we added orange and fennel, that really lever the taste of the fish. Simple, easy, light and ready in 20 min.
Ingredients (serves 2)
2 sea bass filets
Olive oil
1 fennel, cut in half and then in slices
2 oranges, cut in half and slices
100 gr of black olives (it is worth it to spend a bit more on these)
Almonds, roasted and chopped (optional)
Pepper and salt, to taste
Basil sprigs (optional)
Pre-heat the oven on 180 C.
How to?
Toss the oranges, fennel, basil leaves and olives with olive oil, some orange juice, salt and pepper in a bowl and then spread it out on a baking tray. Put the fish filets on top and put in the oven for 20 min. until the fish has turned white. Serve on a plate and garnish with some roasted almonds and some extra basil if you like.
